Veggieful Coriander Chili Egg Drop Soup recipe is not only full of flavor it’s quick and easy too. Chili and coriander always pair very well together and they make any bone broth flavorsome. Chicken broth has been used in this recipe but you can use any broth or stock of your choice. This recipe doesn’t use a lot of eggs in the actual soup. You can use more if you like your egg drop soups much on the eggy side or just use a bit and top your soup with a boiled, poached or fried egg. The cooking time is about 15 minutes.
Veggieful Coriander Chili Egg Drop Soup Recipe
3 to 4 cups chicken broth or other of choice, 2 small eggs, 2 cups sliced cabbage and shredded carrots, 1 chili(more or less), 3 to 4 tablespoon size of fresh chopped coriander leaves, 2 spring onions, handful of raw zoodles each serving, 2 boiled eggs, salt
Get all your ingredients ready before starting to cook as the soup will cook quickly, chop or slice up your vegetables and coriander.
If you’re using fresh chili grind it a bit so it releases flavors quickly in the soup as it cooks for a short time. You don’t need to do this with dried or semi dried chili
Divide your coriander and chili into 3 parts, 1 part for the sauteed cabbage, some for the broth during cooking and some to sprinkle on the soup during serving.
Saute the cabbage and carrots for a minute or two in fat of your choice with a bit of chili, coriander and spring onions and season with salt
Boil the eggs
Cooking the Egg Drop Soup
Bring your broth to a very low simmer at medium heat. Beat your eggs in a bowl while waiting. Just when the broth starts to barely bubble add the egg in small drizzles into the pot while beating the soup with a fork until you have all the egg in, and the soup starts to simmer. Keep beating just a bit more to make the egg clusters a bit finer. Add the coriander, chili and salt and let it cook stirring a bit from time to time until the egg is cooked and the chili and coriander release their flavors. This should take about 3 to 4 minutes
Add the cooked cabbage to the bowls. Add the raw zucchini noodles as well. Pour on the soup. Top with boiled eggs and sprinkle spring onions, coriander and chili on top.
