This Vanilla Coconut Ice Cream is quick and easy with only 3 ingredients. It contains coconut milk, vanilla and honey. You can serve it with fruit or serve with cakes. I used cherries and pomegranate, which makes it look more festive.
You can substitute the honey with maple syrup for a vegan option. You’ll need an ice cream maker for this recipe. I use an ice cream making bowl which you place in the freezer before using it to make ice cream. These are a much cheaper option compared to the larger ice cream making machines though they don’t make ice cream in larger quantities.
Vanilla Coconut Ice Cream Recipe
2 to 4
400 ml can coconut milk or more, 1 teaspoon vanilla or more, 1 tablespoon honey, fruit to serve( I used cherries and pomegranate)
Ice cream making bowl or machine
Place your can of coconut milk in the fridge for 3 or more hours. If using an ice cream making bowl also place it in the freezer based on manufactures’ operating instructions.
When ready to make ice cream open your coconut milk and scoop out the thickened milk or cream leaving the water in the can. In a bowl mix the coconut milk, vanilla and honey. Beat it very well and pour into your ice cream maker and process according to instructions of your ice cream maker.
The bowl that I use only processes to soft serve which is perfect for whipped cream consistency. To make it harder I place the soft serve ice cream still in the bowl in the freezer for about 10 minutes to harden a bit.
When it’s ready scoop out and serve with your fruit of choice and a bit of honey if you like.
