Topped with lemon rubbed pork and zucchini noodles, it makes a meal in a bowl. You can easily change the flavors around by using different combinations of herbs like coriander, ginger and even paprika. You can also make it a red curry or green curry recipe. The pork can also be substituted with any other protein.
Turmeric Curried Cauliflower Zoodles Soup with Crispy Pork Recipe
1 spiralised zucchini, 2 cups riced cauliflower, half a cup coconut milk, 1 cup broth/stock, half a cup water, 1 heaped teaspoon turmeric powder, 1 fresh chili or half a teaspoon dried flakes, 2 chopped garlic, 2 spring onions, 1 teaspoon lemongrass paste or 1 stem, olive oil, 1 or 2 tablespoons cooking fat of choice
2 portions pork fillets, half a lemon, black pepper, 1 tablespoon cooking oil of choice, salt,
Start the pork by rubbing the fillets with the lemon, the cut side of the lemon on the pork. Rub until the fillet starts to flatten. Do this both sides.
Season with salt and black pepper and fry in a pan at medium heat, for about 10 minutes each side until crispy depending on their thickness.
In a pan at medium heat, fry the cauliflower rice for about 2 minutes. Add garlic, salt, turmeric and all the spices and mix. Add the spring onions and fry together for a further minute.
Add broth, water and coconut milk and cover. Bring to a simmer and lower the heat so it’s just bubbling.
Let it cook for about 10 minutes and take off the heat. Toss in the zoodles and leave them sit in the hot soup for a minute before serving.
Serve your soup with the pork and drizzle some olive oil on. Sprinkle spring onions, black pepper, chili and more salt if needed.
