Oxtail is a tasty part of beef which doesn’t really need much added to it to enhance it’s flavor. In this recipe the oxtail has just been boiled then fried, onion and tomato added with a bit of balsamic vinegar in. The meal has been served with some Swiss chard and a raw avocado cauliflower rice. You can also serve with rice if you’re okay eating it or just like it. To make this oxtail dish you’ll need the following
Tomato Onion Oxtail Stew Recipe
1 kg oxtail, 1/2 an onion diced into small pieces, 1 large tomato grated, 3 to 4 tablespoons balsamic vinegar, 1 and 1/2 cups broth from the oxtail, salt
Boil the oxtail first. You can use a pressure cooker or on the stove top. To boil on the stove top put the oxtail in a large pot and fill with water up to just above the oxtail level. Cook at medium heat for about 2 and 1/2 to 3 hours. Leave some broth reduction to the side to add on to your sauce at the end. The oxtail may not look pretty but it will be tasty.
Once the oxtail is done cooking or boiling you can transfer to a pan if you were using a pressure cooker. Add about 2 tablespoons cooking fat of choice to a pan and add the oxtail. Pan fry for a bit and add the onions. Cook for a minute or so and then add the tomatoes. Let it cook until the tomatoes cook to a sauce. Add the broth, salt and the balsamic vinegar. Tweak with more salt or vinegar. Let it cook down and reduce to your preferred sauce consistency.
Slice the greens thinly and sautee with a bit of oil and salt for a minute or two
Raw Cauliflower Rice with Avocado
Mix 2 cups cauliflower rice with 1 avocado, 1 tablespoon olive oil, 1 tablespoon apple cider vinegar and salt, then mold. You can use cookie cutters to shape.
