Add more vegetables to your diet with this Easy Paleo Bacon Kale Skillet Meal. This is an easy one pan meal you can have as it is or over some cauliflower rice or real rice. You can also use this bacon and vegetable combination as a filling for your sandwiches. The meal is a combination of bacon, kale and carrots, with the vegetables only cooked for a few minutes so they are still crunchy and full of flavor.
Easy Recipe Adaptations
If you don’t have kale you can easily use Swiss chard in this recipe or other greens of your choice. Bacon can also be easily substituted with some thinly sliced pork belly. You can also add on herbs, chili or other seasonings of your choice based on your diet protocol.
Easy Paleo Bacon Kale Skillet Meal Recipe
2 to 4 Servings
- 8 to 10 Kale leaves
- 6 rashers bacon cut of your choice
- 1 large carrot
- 2 tablespoons cooking oil of your choice
- salt to taste
Prepare to cook the bacon by dicing it into small pieces.
Wash and slice the kale or just shred into small pieces, and also slice the carrots into thin strips using a peeler so they cook quickly.
In a pan at medium heat add the cooking oil and warm it up, then fry the bacon until golden brown around the edges.
Take the bacon off the pan and set it aside in a plate and add the kale and carrots.
Cook turning the kale so it cooks evenly, until the kale loses it’s raw color for about 2 to 3 minutes.
Season with salt and whatever other seasoning you’re adding on, then add the bacon back in the pan.
Toss and mix very well and take the pan off the heat ready to serve.
