Keto Zuppa Toscana
Paleo, Keto and AIP Zuppa Toscani With Cauliflower, Ground Beef and Coconut Milk
This Keto Zuppa Toscana is made with Cauliflower, beef mince, coconut milk and some bacon. This is a Paleo, Keto and AIP compliant version of the soup which is traditionally made with potatoes, heavy cream and some sausage. This recipe makes a soup that cooks easily in under 30 minutes. The mince is cooked first with bacon and seasoned with a mix of onion, garlic, basil and thyme and set aside to cook the cauliflower and kale. The vegetables and meat are then combined to cook together in stock and coconut milk.
You can substitute the beef mince with a sausage of your choice if it’s compliant with your diet. You can also add on other spices and herbs like rosemary or black pepper if they also suit your diet protocol.
Keto Zuppa Toscana Recipe
- 150 g beef mince
- 2 rashers fatty bacon, finely diced
- 2 cups cauliflower florets
- 1 cup sliced kale
- 1 cup coconut milk
- 2 cups chicken broth
- 1 medium onion, finely diced
- 1 teaspoon chopped garlic
- Half a teaspoon dried basil
- Half a teaspoon dried thyme
- A pinch of turmeric
- 2 tablespoons cooking oil of your choice
- Salt to taste
In a pot or large pan with a lid, at medium heat add onions and fry them until they are golden brown, then add bacon and cook for about 2 minutes until it’s cooked, then add the mince.
Fry the mince until it looses its raw color and is starting to brown, then add the garlic.
Cook for about 2 minutes turning the mince from time to time.
Add the basil, thyme, salt and turmeric and cook for a further minute, then take the mince off the pan and set it aside leaving the fat in the pan.
Add the cauliflower to the pan, adding more cooking oil if needed and saute until it starts to loose rawness, for about a minute.
Add the kale and cook until it starts to wilt.
Add the chicken broth and bring to a simmer and cook for about 2 minutes until the cauliflower is soft.
Add the mince back in and add the coconut milk in as well.
Taste and season with more salt and herbs if needed.
Cover with a lid and lower the heat so it simmers slowly for about 5 minutes before serving.
