Honey Coriander Beef Stir Fry
This Paleo Honey Coriander Beef Stir Fry Recipe cooks quickly in under 15 minutes with beef that has been marinated before hand. These tender beef strips have been marinated in a mix of blackstrap molasses, apple cider vinegar with paprika, garlic and salt for seasoning. During cooking the beef is finished of with honey, coriander leaf, garlic and scallions. You can make it spicy or hot by adding on chili during the finishing stage of cooking.
Blackstrap molasses mixed in with other ingredients works well when cooking meat or vegetables as a kind of soy sauce alternative as seen on this Molasses Baked Pumpkin recipe. It works well especially when there is some sweetness in the recipe as in this Honey Coriander Beef Stir Fry.
For your stir fry you can use beef strips that have already been cut for you or you can easily buy a tender cut of meat like sirloin, ribeye, or any other cuts depending on budget and preference. To easily cut the beef strips just slice the beef steak into thin slices diagonally against the grain of the steak. The goal of cutting this way is just to cut the muscle fibres into shorter pieces so the meat is more tender when you chew instead of trying to chew the longer muscle fibres. This meal has been served with some sauteed celery and resistant starch rice. You can serve it with Cauliflower rice instead of rice to keep it all Paleo.
Honey Coriander Beef Stir Fry Recipe
MOLASSES BEEF MARINADE
400 to 500 g stir fry beef strips, 2 tablespoons blackstrap molasses, 1 teaspoon garlic paste or finely chopped, 1 tablespoon apple cider vinegar, half a teaspoon paprika, salt to taste, 3 tablespoons water
Mix all the ingredients with the beef strips and leave to marinate for 30 minutes at the least. You can marinate for longer covered in the fridge for up to 4 to 6 hours.
Marinated beef, 2 teaspoons honey (add 1 more teaspoon if you want it sweeter), 1 tablespoon dry coriander leaf, 2 cloves chopped garlic, 1 teaspoon grated or paste of lemon grass (optional) 1 level teaspoon coconut flour, 2 to 3 scallions, 2 tablespoons cooking oil of choice, remains of the marinate, 3 tablespoons broth or stock of choice or water. Salt and other seasonings of choice to taste
To make more sauce add about half a cup broth or stock instead of 3 tablespoons.
Remove the beef from the marinate onto a separate plate to allow any excess liquid to drain off. Save the remains of the marinade to add to the sauce. Pat off the excess water off the meat with a clean kitchen towel.
In a frying pan heat up cooking oil over high heat, and stir fry the beef strips for about 3 to 4 minutes. If you have any excess liquid released by the beef because the cooking temperature is not hot just leave it cook till it’s gone.
Reduce the heat to medium and add garlic, coriander and other spices you want to add and mix, then add the coconut flour and stir fry for a minute or so to cook and brown the coconut flour.
Add honey and mix then add the remains from the marinade. Stir fry for another minute.
Add the chopped scallions and the broth and mix through then take off the heat ready to serve.
You can have it as a dry stir fry with only a few tablespoons broth added or add more broth for some more sauce. Season with salt and serve.
