Sweet Chili Peri Peri Lollipop Chicken Wings are first marinated then baked in the oven for an hour, then glazed at the end with more sweet chili sauce. The sweet chili marinate is made of apple cider vinegar, olive oil, chili, coriander and honey. The total amount of honey used including the glazing is 1 and 1/2 tablespoons. You can adjust the amount of chili used to make it is spicy or less spicy as possible. You can also easily make double the marinate if you’re doing a lot more wings. These ones are a mild chili flavor. You can marinate these wings for about 2 hours or longer in the fridge.
Sweet Chili Peri Peri Lollipop Chicken Wings Recipe
10 to 15 chicken wing lollipops, one and a half tablespoon honey, 1 tablespoon apple cider vinegar, half a teacup water, one and a half teaspoon dried chili, one and a half teaspoon paprika, 1 tablespoon dried coriander herb
To make the chicken wings into a lollipop shape just cut the skin and tendons attaching to the bone on the smaller side of the wing and just push the flesh up towards the top.
On the part of the wing with two bones cut flesh off the bone on the wider side of the wing. Pull out the smaller bone. It comes off easily and push the meat to the other end of the bone, and you have chicken lollipops. You’ll appreciate going through this effort when you eat your wings.
Place your wings meaty side down on your baking dish ready for the marinade.
Sweet Chili Peri Peri Marinade/ Marinate
Add to a pan half a cup water, 1 tablespoon honey, 1 teaspoon paprika, 1 teaspoon chili, 1 tablespoon coriander, 1 tablespoon apple cider vinegar, 2 tablespoons olive oil, quarter teaspoon salt
Bring to a boil on the stove top at medium heat. Once it starts boiling take it off and let it sit a bit to cool down. Taste and start to tweak. Add more chili or salt if needed.
When you’re ready pour over the chicken wings. Cover with a lid or cling film and leave in the fridge to marinate for 2 or more hours. I’ve left it overnight sometimes and sometimes just for two hours. It’s all about what’s convenient for you at the time. Nothing wrong with varying flavors due to different marinating times.
Time – 1 hour
Bake the chicken at 220 degrees celcius in a preheated oven.
Bake for 30 minutes then turn the wings. Bake for another 15 minutes and turn the wings again. Lower the oven temperature to 200 degrees celcius and bake the wings for a further 15 minutes.
Sprinkle on some paprika every time you turn the wings and also baste or pour over them the sweet chili sauce from the bottom of the dish
Drain the left over sauce from the wings to a container and prepare for glazing. You’ll need about 4 tablespoons of this while hot or a bit more if you like. You can store the rest to use in other meals if you like the taste of sweet chili with chicken flavor.

Mix the glazing ingredients and coat over the chicken
Sprinkle with coriander and serve
You can have them as they are or with any meal of choice. Here they are served with a purple cabbage salad with sliced peaches, olive oil, salt and lemon juice with an avocado on the side. It all went down very quickly.
