STRAWBERRY MINT OLIVE OIL GELATO / SET PUDDING
To make 4 servings you will need
250 g strawberries, 10 to 15 mint leaves, 5 tablespoons olive oil, half a cup water, 3 tablespoons gelatin dissoved in half a cup warm water or set gelatin,melted( Ijust find it easier to do it this way for convinience) 1 lime juice(lemon or 1 tablespoon apple cider vinegar will do too) sweetener after blending and tasting.
Melt gelatin at a low heat and add all ingredients to a blender.
Taste and sweeten if you have to and mix in the sweetener. If you use sweeteners like honey and maple syrup you can swirl them in before serving ice cream or use them as a topping.
Pour into serving dishes and leave to chill for about 2 hours before serving
TO MAKE GELATO
Pour into your ice cream maker and follow the machine instructions, or pour into an ice cream making bowl if you use one like me. Affordable and does the job. Just make peace with the fact that you won’t make a lot of ice cream in one day. Pour blended mix into bowl
you can serve anytime from soft serve stage or leave it longer for an icier gelato.

- Sweeter of choice- blend,taste then sweeten if you have to
- Blend everything then sweeten
- For set pudding pour in containers and chill in the fridge for 2 hours
- For gelato use ice cream maker following manufacturers instructions.
