The tuna is simply dressed with olive oil, lemon, salt and spring onions. Spring onions are lower in Carbohydrate content than onions, and also have a milder flavor when having them raw. Lemon flavor works very well with the salt, olive oil and spring onions to produce a salty, tangy flavor and giving the tuna some fresh flavors, to go very well with the avocado. A small amount of carrots have been added on just as a topping for a crunchy texture but you can easily skip them depending on the amount of carbs you want to have in your meal.

It can be easily put together even at work to make a quick and easy lunch which won’t need to be heated up. All you’ll need to take with you would be an avocado and some tuna already mixed in with olive oil, spring onions, salt and other seasonings you want to use, in a separate container.
Spring Onion Tuna Stuffed Avocado Recipe
1 ripe avocado, 1 can 85 g tuna or more, 2 or 3 sliced spring onions, 1 or 2 tablespoons olive oil, 2 tablespoons lemon juice, salt, a few shreds of carrot
In a bowl mix some drained tuna with olive oil, spring onions, 1 tablespoon lemon juice, salt and any seasonings you want to add on.
Cut the avocado in half and drizzle on half a tablespoon each lemon juice over the cut side.
Top with your tuna and top with a few shredded carrots and some more spring onions.
Add salt, more lemon or olive oil if you need to.
