This Spinach Chorizo Egg Bake is mainly cooked in the oven to make an easy breakfast with minimal cooking effort. This baked dish is a combination of spinach, tomato sauce, chorizo sausage and eggs and you can even add bacon and also use a different sausage instead of chorizo if you prefer. The combination of all these ingredients will make a very tasty breakfast.
1 cup steamed spinach, tomato sauce, 1 chorizo, 2 to 4 eggs, salt and other seasonings of choice.
1 small diced onion, 2 medium grated or chopped tomatoes, garlic or black pepper or both, salt
Start off the tomato sauce by frying the diced onions until translucent. You can add garlic as well.
Add tomatoes and cook until the tomatoes turn into a sauce and season to your taste.
The Spinach Chorizo Egg Bake
Add the steamed spinach first to the bottom of the oven proof dish. Add peppers or any herbs of choice and salt.
Follow with the tomato sauce, then sliced sausage, egg and top with butter and some salt.
Bake in a preheated oven at 220 degrees for about 15 to 20 minutes or until the egg yolk is done to your preference
