This spicy lamb mince zucchini noodles recipes is a tasty combination of lemongrass and chili on the lamb mince. If you don’t like spice you can use different herb combinations of ginger, coriander and lemongrass, which are also tasty. You can also use coriander or kaffir lime leaves instead of lemongrass, in this recipe to produce different but still tasty flavors. Experiment a bit and think of your favourite curry ingredients and go with it.
2 or more spiralised zucchini, 150 to 200g mince, half an onion diced, 3 large grated tomatoes, 1 teaspoon turmeric powder, 1 teaspoon lemongrass paste or stem,half a cup broth or water, 1 or 2 tablespoons cooking oil of choice, 2 cloves chopped garlic, half teaspoon dried chili flakes or more
Begin by frying the onion in fat of choice at medium heat for about a minute, then add the tomatoes and let them cook for around 5 minutes to a sauce.
Add all the spices and seasonings and mix.
Add the mince and let it cook for 2 to 3 minutes, turning it every now and then till it loses the raw colour.
Add broth and bring to a simmer. Taste and season with salt or add more chili and lemongrass if you need to.
Add the zucchini noodles and mix them in.
Put a lid on and take them off the hot plate and set them aside to sit for a minute or two before serving. The hot mince will cook them a bit.
Serve with more chili flakes if you’re into spice
