This Shredded Coconut Almond Hot Chocolate is an easy way you can enjoy your hot chocolate if you don’t have coconut milk handy or just want to minimize the use of canned milk as it uses shredded coconut. You can also use coconut flakes. Shredded coconut used this way can be a dry milk alternative that you keep in the pantry. This is a good idea if you want a clean preservative free healthy milk and it’s probably a good alternative cost wise as it works out cheaper than buying coconut milk in a can which also goes off quickly if not used in time.
In this recipe shredded coconut is blended in with hot water, almond butter, dark chocolate, vanilla and honey, then a sieve or strainer is used. You can use any nut butter of choice. You can also use powdered cocoa, cacao or carob in place of dark chocolate.
Shredded Coconut Almond Hot Chocolate Recipe
4 to 6 tablespoons shredded coconut, 3 cups hot water, 1 tablespoon or more nut butter of choice, 2 squares or more 70% or higher dark chocolate, 1 vanilla bean
Boil the water and transfer to a blender
Add all the other ingredients to the blender and leave them sit covered with a lid for a minute.
Lift the lid to let off the steam then put it back and blend at high speed for about 30 seconds to a minute, depending on blender.
Use a sieve, strainer or a plunger to filter off the chunky remains
