This Resistant Starch Egg Fried Rice is a way you can easily heat up your resistant starch rice. In this recipe cabbage and eggs are combined with the resistant starch rice. You can easily add other types of vegetables in your rice, herbs as well as spices. Instead of heating up the rice in the microwave or the oven, frying the eggs and reheating the rice in them is a tasty and an easy way of reheating your resistant starch rice. To make this egg fried resistant starch rice you’ll first need to make the resistant starch before hand.
To Make Resistant Starch Rice
4 or more servings
2 cups rice, 4 cups water, 1 tablespoon coconut oil
Add water, rice and coconut oil to a pot with a lid and cook at medium heat until the water comes to a boil.
When the water starts to boil lower the heat and cook at simmer covered until the rice is cooked and all the water is absorbed. This should take about about 20 minutes
When the rice is cooked, cool it and transfer it to an airtight container and keep in the fridge for 12 hours so it becomes resistant starch rice, which is beneficial for gut bacteria, lower in carbs and lower in calories than regular cooked and uncooled rice.
Resistant Starch Egg Fried Rice Recipe
About 2 cups cooked rice, 2 or more eggs, 1 cup sauteed cabbage or other cooked vegetable, salt to taste, 2 tablespoons cooking oil of choice
Add cooking oil to a pan to heat it up
Beat the eggs and pour into the pan and stir for about 5 seconds then add the rice and continue to stir and add the cabbage and stir fry until the egg is cooked and the rice has warmed up. This should take about a minute to 2 minutes.
