Raspberry Gelatin Ice Cream
This Raspberry Gelatin Ice Cream recipe involves making and setting raspberry jello before hand. You’ll need an ice cream maker to make this recipe. If you don’t have one you can set the ice cream mix in the fridge and it will set as it contains some gelatin.
To make raspberry jello
Just melt 1 to 2 tablespoons hard set gelatin(you can use 1 tablespoon unflavoured gelatin dissolved in half a cup warm water) add a handful of raspberries and sweetener, then leave to set in the fridge.
Raspberry Gelatin Ice Cream Recipe
Ingredients to make ice cream or set pudding
Pre-made raspberry jello( to be used at the end of gelato making), 200g or 2 handfulls raspberries(fresh or frozen), 2 teaspoons unflavoured gelatin dissolved in half a cup of water,1 cup coconut milk,5 tablespoons olive oil, sweetener of choice
Melt or bloom gelatin, and blend it with olive oil, raspberries, sweetener and coconut milk.
Pour into serving dishes, add raspberry jello and set for 2 hours in the fridge.
TO MAKE ICE CREAM
Pour into ice cream maker or bowl and make following manufacturing instructions
add jello anytime from soft serve

- Premade raspberry jello
- 200g raspberries
- 1 cup coconut milk
- 5 tablespoons olive oil
- 3 tablespoons size hard set gelatin
- Sweetener of choice
- To make raspberry jello melt 1 to 2 tablespoons gelatin, with a handful of raspberries and sweetener. Set in the fridge.
- To make gelato blend melted gelatin, coconut milk and olive oil
- For set custard pour into container, top with jello and chill in the fridge for 2 hours.
- For gelato pour into ice cream maker and process following manufacturer’s instructions
- Top with jello towards the end.
