Quick Chorizo Capers Tomato Zucchini Noodles make a very fast meal. They combine zucchini noodles, capers, olives, tomatoes and some chorizo sausage to make a delicious healthy meal on the lighter side. This meal cooks very quickly so you’ll need to have ingredients assembled ready to cook.This recipe uses only a few ingredients but you can add on things like garlic. You can also use a different sausage or even use bacon instead of chorizo sausage. Diced chicken pieces would also work very well in this recipe, though they will take a bit longer to cook.
Quick Chorizo Capers Tomato Zucchini Noodles Recipe
3 or more spiralised zucchini, 1 sliced chorizo sausage, 2 tablespoons capers, 2 tablespoons sliced olives, 2 tablespoons olive oil or other cooking oil of choice, 1 handful rocket/spinach, 1 large tomato, grated or finely chopped
In a pan at medium heat in fat of choice cook the tomatoes for about 2 minutes.
Add the chorizo and cook for another minute, then add the capers, olives and rocket and just mix until the rocket starts to wilt.
Add the zucchini and just toss it through mixing it in with everything else, using tongs or a fork.
Depending on how you like your zucchini you can take it off the heat after tossing. That’s what I did in this recipe, just long enough to warm the zucchini without softening them too much.
You can let them cook a just bit more, for up to 2 minutes if you prefer them done a bit more.
If you cook them longer than that they will start to release water, which may not be ideal in this recipe.
Take it off the heat and serve immediately with a drizzle of olive oil and any herbs of your choice
