Fiery Hot Easy Kale Recipe
Spice up your kale with this quick and easy Peri Peri Tomato Kale Recipe. The recipe combines lightly cooked kale with some lightly cooked tomatoes and chili to make a tasty vegetable side. Make it very hot by adding more chili or reduce the heat by adding less chili. It’s a recipe that is easy to customize to suit your taste. This recipe will cook easily in under 5 minutes. You can also cook it easily in large quantities to keep ready to have with your meals. You can also easily just keep your kale sliced ready to cook as it doesn’t require much time to cook.
Peri Peri Tomato Kale Recipe
- 8 to 10 leaves kale
- 1 large tomato
- 2 or more red chilis
- 2 or 3 tablespoons cooking oil of choice ( 3 tablespoons if you want it more fatty)
- salt to taste
Prepare to cook the kale by washing and slicing the bunch into thin or fair sized slices. Cut the tomato into small cubes and slice the chili.
In a pan at medium heat up a tablespoon of cooking oil.
Fry the kale for about a minute until it wilts.
Take it off the heat and transfer it to a bowl or container.
Return the pan to the stove and add the remaining amount of cooking oil and heat it up.
Add the diced tomato and the chili and leave it cook for about a minute taking care not to overcook the tomatoes to a sauce.
Drain any excess fluid off the kale and add the kale into the pot to mix in with tomatoes and chili.
Mix very well and leave it come to a simmer.
Season with salt and take it off the heat ready to serve.
In this recipe the kale has been served with a poached egg and some mash.
