This Paleo Lemon Coriander Zucchini Tagine Chicken is cooked tagine style in a pan with a lid. The chicken combines the flavors of lemon, olives and coriander to make a tasty chicken dish.You’ll need to use a thick pot or pan with a lid or better still a tagine if you have one. I used a pan as I don’t have a tagine. All that is needed is to keep the temperature at a low level and the lid on so the steam keeps trickling back from the lid to the chicken as it cooks.
4 to 6 servings
4 or more Chicken legs/thighs or any part, 1 large zucchini, 1 cup chicken stock or any broth, half a teaspoon turmeric, 2 teaspoons dried coriander( can be substituted with herbs like thyme/rosemary but flavor will differ)10 to 12 pitted olives, 1/2 an onion, 4 to 5 lemon slices, half a cup peeled and diced sweet potatoes, half a cup chopped carrots and other vegetable bits you have in the fridge.
Coat the chicken with turmeric, coriander, salt and a tablespoon of olive oil.
Cut half the zucchini into small pieces and the other half into slices. Get all your vegetables ready before cooking.
In a pot or pan of your choice, cooking at medium heat add about 2 tablespoons olive oil or other cooking oil of choice and warm it up. Add lemon slices and cook for about 2 minutes until the middle part is cooked and they have flavored the oil. Take them out and save them to use later.
Add the chicken and brown it a bit all round for about 5 to 6 minutes. Take it off the pan and keep it aside.
Add the lemons back to the pan and also add the onions. Cook turning occasionally for about a minute or two. Add the zucchini that is chopped into small pieces and continue frying for another minute. Add the chicken stock, the chicken and all the other vegetables. Add a bit of salt, sprinkle on a bit more coriander. Cover with a lid and reduce the heat to a range where it’s cooking at a low simmer.
Leave it cook at a low simmer for an hour, keeping the lid on until it’s cooked.
When it’s done leave it sit off the heat for about 15 to 20 minutes before serving
