This Paleo Honey Lime Chicken Salad makes it easy and tasty to have a salad without the need for extra dressings. The combination of honey, lime juice, olive oil, spices and salt on chicken makes it an adequate salad dressing. You can substitute honey for maple syrup and lime for orange or lemon. Adjust the amount of honey if using oranges as they are sweet already. For this recipe I used chicken thighs but you can use any part you like or have.
3 to 4 chicken thighs cut into pieces, 1 or a bit more tablespoons honey, 4 tablespoons lime juice, olive oil, 2 servings spinach leaves or other salad, 1 avocado, tomatoes(optional), lime for serving, black pepper or other herbs of choice for sprinkling on top
Fry the chicken pieces at medium heat in about a tablespoon or two olive oil, turning them until they get to golden brown. This should take about 10 to 12 minutes.
When the chicken is cooked add salt, honey and mix, then add the lime juice and mix through, ensuring the chicken is coated well.
Take it off the heat and leave it sit in a warm place covered while you get your salad ingredients ready.
Serve the chicken over the salad. You can drizzle olive oil, over everything, squeeze fresh lime over everything and black pepper or other herbs to top it all off.
