Paleo Garlic Sausage Roast Pumpkin Salad makes a tasty meal with Paleo sausages and some pumpkin. The Paleo sausages were not flavored so Garlic combined with some herbs was used to season them and give them more flavor.
If you cook pumpkin in bulk you can have it in meals like soups, with other cooked vegetables, or on it’s own as a snack and even on salads. It’s a handy flavorsome addition to your meals you can have ready in the fridge. This salad combines pumpkin baked with maple syrup, herbs, oil and salt. The sausage has been cut up and chopped garlic and herbs added to it to give it more flavor. This sausage used in this recipe is made specifically to suit the paleo diet. Keep an eye out for these Paleo compliant sausages in your local supermarkets. If you can’t find any compliant sausage you may have to make your own still using ground meat.
Paleo Garlic Sausage Roast Pumpkin Salad Recipe
1/4 sliced pumpkin, maple syrup, herbs, salt, fat or oil of choice
Place pumpkin in lined baking tray, drizzle maple syrup, olive oil and sprinkle salt and herbs
Bake in a Preheated oven at 220 degrees for about 15 minutes
2 sausages sliced, garlic, herbs, salt and olive oil
Add garlic, herbs, salt if needed, and a bit of oil to the sausages, flattening them a bit with your fingers. Fry in fat of choice until it starts to brown. You can also bake these at the same time as the pumpkin.
Cos Lettuce, avocados, sliced onion, raw shredded beetroot, tomatoes sprinkled with herbs, lemon, olive oil, salt
Plate your salad, add salt, olive oil and a generous squeeze of lemon juice.
