Oxtail Mushroom Bone Broth Soup will ensure you enjoy your intake of bone broth in your diet, as well as other food you add in. This is not really a recipe but a way you can put together your bowl of bone broth, if you already have some made up. If you normally have just your broth in a cup as a drink, adding other cooked food in the soup will turn it into a meal. You can use a cooked meat of choice, vegetables and even some leftovers from previous meals.Broth soups can be so enjoyable if you combine different types of food in them. If you have broth handy, cooked meat and other vegetables this becomes just a quick assembly meal.
I used broth that I already had in the fridge. You can season your broth with chili, herbs or whatever else you like. This broth is just salted and flavored with a squeeze of lime, just based on my preference as lime or lemon cuts through the richness of the broth with the zesty flavor.
The Oxtail/Other Cooked Meat
You can use other type of meat that you have cooked. The oxtail that I had has just been boiled for about 3 hours, and fried with onions. This was a step towards making an oxtail sauce on the stove top for another meal. Or else just boil oxtail for about 3 hours or until tender,add salt, then fry in fat of choice until it starts to brown and add onions and let them cook until translucent.
You can use any greens of choice. Just saute them for about 2 minutes in fat of choice and add salt.
Mushrooms/Noodles Of Choice
Grill mushrooms with salt added and no oil for about 2 minutes each side. You can do this on a normal ordinary pan as well. Slice them thinly and add more salt if needed. You can also used sauteed zucchini noodles or other noodles of choice.
You can add a egg boiled or poached if you’re not allergic to them. You can add other steamed vegetables as well.
