This Orange Spicy Honey Shredded Chicken Kale Salad is tasty and this recipe can be a way to change up chicken for salads. Shredded chicken is handy for making quick meals if you already have cooked chicken in the fridge. You can shred your chicken and have it cold or you can warm it up in a pan by frying it in a bit of olive oil with some herbs. You can also add other flavours depending on your diet protocol. This was a flavored with honey, lime and spices to make a salad which won’t need extra dressing.
To make Orange Spicy Honey Shredded Chicken Kale Salad
2 or more chicken breasts, 2 tablespoons olive oil, salt, 1 tablespoon honey, half an orange juiced, half a lime juiced, 2 teaspoons dried mixed herbs, quarter teaspoon or more dried chili
kale leaves, 1 tablespoon olive oil, half a lime, salt, tomatoes
Place the chicken in an oven proof dish and drizzle about a tablespoon of olive oil and salt.
Bake in a preheated oven for about 20 to 25 minutes at 220 degrees celcius until cooked.
Leave it rest and cool. You can save it in the fridge for later meals or just shred it with your hands.
To make honey chicken
Add olive oil to a pan at medium heat and add the shredded chicken and fry for about a minute. Add the spices and honey then add the orange and lime juice. Mix and leave it cook for about a minute and take it off the heat. Taste and season with salt or whatever seasoning you would like.
To make the salad, massage the washed and ready to eat kale leaves, in other words just squish the kale in your hands rubbing till its tender or looks glossy. Add olive oil, salt, lime juice to the leaves and mix through. Top with the chicken and all the juices. Serve with tomatoes if you eat them and squeeze a bit more orange and lime over everything.
