This Onion Mustard Sauce Pork recipe combines mustard with basil, onions and garlic leaves, to make a tasty meal you can have with any vegetable side of your choice. A fatty pork chop, which cooks quickly is used in this recipe. Pork belly can also be used in place of pork chops. This recipe is good for those that love fatty pork. If you don’t like fatty pork you can use a leaner cut of meat.
To keep this recipe low in carbs you can make your own mustard, or you can buy your mustard with no added sugar. If you don’t have garlic leaves you can use scallion leaves. You can substitute apple cider vinegar with lemon juice for a different but still tasty variation.
Onion Mustard Sauce Pork Recipe
- 2 pork chops
- half a medium onion
- 2 tablespoons mustard sauce
- 1 teaspoon dried basil
- half a cup coconut milk
- half a cup stock of your choice
- 2 tablespoons apple cider vinegar
- half a teaspoon crushed garlic
- 4 garlic leaves sliced
- salt to taste
- 2 tablespoons cooking oil of choice
Cut the pork into small pieces ready to cook, and dice the onions finely.
In a pan at medium heat, heat up the cooking oil and fry the pork until it starts to turn golden brown for about 8 to 10 minutes
Season the pork with salt and take it off the pan and set it aside while cooking the sauce.
Add the onions to the pan and fry until golden brown without burning.
Add the chopped garlic cloves and fry for a further minute.
Add the basil and mix then add the apple cider vinegar.
Add the stock and bring to a simmer, then add the coconut milk.
Mix and add the meat back in, and bring to a simmer.
Lower the heat and leave it cook for about 2 to 3 minutes or until the sauce reduces to your preferred level of consistency.
Take the pan off the heat, and add the garlic leaves ready to serve.
