One Pan Spinach Egg Breakfast Recipe
2 medium tomatoes, 1 onion, 2 to 3 cups spinach, 2 to 4 eggs, 2 tablespoons cooking oil of choice, salt to taste, herbs of choice
Prepare to cook by chopping up the onion, dicing the tomatoes into small pieces and preparing the spinach for cooking
In a pan at medium heat, heat up the oil and add the onions. Cook for about 1 to 2 minutes until they start to turn golden brown.
Add the tomatoes and cook for 3 to 4 minutes to a sauce. Stir from time to time to ensure they don’t burn at the bottom of the pan.
Add the spinach and mix with the tomato sauce, so the spinach quickly wilts.
