This One Pan Egg, Bacon, Kale Tomato Breakfast makes a quick and easy meal for one or two people sharing. You will need to have the ingredients prepared and ready to cook as it cooks very quickly. It’s quick, it’s a tasty combination of all the favorite protein and veges and only one pan to wash up. This can easily be a favorite on repeat.
1 or 2 rashers streaky bacon, 2 cups sliced kale, 2 eggs, 1 medium tomato, 1 tablespoon cooking fat of choice or more if your bacon is not fatty, salt, black pepper, dried basil or other herb of choice for sprinkling on(basil and tomato combine well taste wise)
Dice the bacon into small pieces, Grate the tomato or squish it if it’s very soft and juicy.
In a pan add cooking fat of choice and cook the bacon pieces for about 4 to 5 minutes until it starts to go brown and crispy around the edges.
Move the bacon aside and add the kale and saute for about a minute.
Move the kale aside the pan and break in the eggs. Add the grated tomatoes and herbs on top of the tomatoes. Place a lid on the pan.
Lower the heat and cook for about 3 minutes or so depending on how you like your yolks
Season with salt and black pepper
