Low Carb French Onion Beef Soup

This Low Carb French Onion Beef Soup is made with a combination of onion, garlic, broth, ground beef, cinnamon and coconut milk. Adding beef mince to the soup helps thicken the soup so you won’t need to add any flour or thickeners to the soup.
In this recipe I used coconut oil to fry the onions in, but you can use butter or other cooking fat of your choice. If you like a stronger onion flavor add more onions, though you should keep in mind your carbs from the onions if you’re on a lower carb diet. You can cook and caramelize the onions for up to an hour depending on how low your cooking temperature is as the longer you brown them the sweeter they will become as they caramelize slowly. You can add a bit of sweetener, if the sweetness from the onions is not enough for you.
Low Carb French Onion Beef Soup Recipe
- 150 to 200 grams minced beef
- 1 large onion
- Half a teaspoon cinnamon
- 1 teaspoon garlic
- 2 cups beef broth or other stock of your choice
- 1 cup canned coconut milk
- 2 tablespoons apple cider vinegar
- 2 tablespoon coconut oil
- Half a teaspoon sweetener of you choice (optional)
- salt to your taste
- Fresh herbs of your choice for garnishing
Prepare to cook the onions by dicing them finely into small cubes.
Cooking at medium heat, in a pot with a lid melt about a tablespoon and a half coconut oil and add the onions.
Cook them until they start to go golden brown, for about 10 minutes.
Add the garlic and fry until it also starts brown around the edges for about 2 minutes.
Add your cinnamon and fry for about a minute and add sweetener if you’re adding any and mix, then add the broth and apple cider vinegar.
Cover with a lid and bring the broth to a simmer then lower the heat so the broth is gently simmering.
While the broth slowly simmers add the remaining coconut oil to a separate pan, at medium heat and fry the mince.
Cook the mince, turning it until it starts to loose it’s rawness, for about 4 to 5 minutes.
Once the mince is cooked through season with salt and mix, then transfer the mince into the simmering broth.
Mix it in and bring it to a simmer then add the coconut milk.
Stir in the coconut milk and cover with a lid and leave it until it starts to simmer again.
Leave it simmer slowly for about 5 minutes, then taste and season with more salt if needed, and add any extra seasonings if you’re having any. Adjust the sweetness by adding more sweetener or add more apple cider vinegar if needed.
Cover and simmer for 2 to 3 more minutes before taking it off the heat to serve.
