Lemongrass Turmeric Chili Curry Sauce is a quick recipe that is ideal if you like quick curry recipes that don’t take all day in the making and use simple ingredients. This curry sauce is made of onions, tomatoes, turmeric, paprika, honey, lemon grass, balsamic vinegar and a bit of chili, with coconut milk and broth added on. This curry sauce makes enough curry for two meals. Because it contains coconut milk you can freeze the sauce or use it within 3 days which is the fridge life of coconut milk.
Lemongrass Turmeric Chili Curry Sauce Recipe
2 meals of sauce
Half an onion finely diced or grated, 2 grated tomatoes, 4 tablespoons balsamic vinegar, 1 tablespoon honey, 1 heaped teaspoon turmeric, 3/4(three quarters) teaspoon paprika, 1 teaspoon lemongrass( you can also try kaffir lime leaves), pinch or more chili, 300 ml coconut milk, half a cup broth of choice, salt, cooking oil
Fry the onion in fat of choice until translucent and add tomatoes. Cook to a paste then add the honey and vinegar. Taste. You should get a good balance of honey, vinegar and salt, more like a ketchup flavor. Add spices and then the broth and bring to a simmer. Add the coconut milk and bring to a gentle simmer and take it off the stove. Save some in a jar once it’s cooled down or freeze it.
Chicken Thighs(preferably with skin on), Curry Sauce, cooking fat of choice
Fry the chicken thighs until the turn crispy brown on the other side. Turn them over, add a bit of salt and add enough sauce to cover them partially and leave them cook. Don’t put a lid on to maintain a bit of crispiness at the top of the chicken. Soggy skin should be avoided. Cook for 15 to 20 minutes depending on chicken size, at a gentle simmer.
The result should be this tasty chicken with lemony chili flavor.
