Lemongrass Herb Bone Marrow Soup

This Lemongrass Herb Bone Marrow Soup combines bone marrow, bone broth, herbs and lemongrass flavors to make a health benefiting soup that is tasty. The bone marrow bones are first fried then the herbs and bone broth are added, and the soup left to simmer, making this easy to cook.
Easy Recipe Adaptations
The soup uses lemongrass powder which you can substitute with fresh lemongrass if you have some. You can add on other herbs of your choice the underlying lemon flavors will still come through working with your chosen flavors. You can also add a tablespoon of coconut cream or coconut milk from the top of the can when serving, if you prefer.
Lemongrass Herb Bone Marrow Soup Recipe
- 4 to 6 bone marrow bones
- 2 teaspoons lemongrass powder or 2 large lemongrass stalks
- 1 heaped teaspoon dried sweet basil
- 1 teaspoon dried mixed herbs
- half a teaspoon ginger powder
- 1 teaspoon garlic
- 1 small to medium onion
- salt to taste
- 3 cups bone broth
- 2 cups water
- 2 tablespoon cooking oil of choice
- fresh herbs of choice for serving (optional)
- 2 tablespoons coconut cream (optional)
If you’re using fresh lemongrass stalks prepare them for the soup by grating them or use them as they are. Chop up the onions as well.
In a pot at medium heat heat up the cooking oil and fry the bone marrow bones for about 2 minutes each side of the bone.
Add the onions and fry until they start to go translucent and golden brown without burning.
Add the garlic and fry for another minute, then add the lemongrass and mix well.
Add the lemon juice to deglaze the pot, then add the bone broth. ( Note the level of the bone broth in your pot as you’re going to cook and reduce your soup to about this amount, after simmering)
Add all the dry herbs and salt to your taste, then add on the water.
Put a lid on the pot and bring the soup to a simmer.
Lower the heat so the soup is cooking at a low simmer.
Leave the soup cook and reduce for about 20 to 30 minutes or until the soup has reduced to the level where it was before adding water.
Take it off the heat ready to serve.
