This Lemon Butter Sauce Keto Jerk Chicken recipe combines cayenne pepper, cinnamon, allspice, black pepper and grated onion. This spice rub combination makes a jerk chicken which is spicy with a hint of sweetness from the cinnamon and caramelized onions. The sauce is not spicy to balance out the spicy flavors of the jerk spice. The sauce combines butter with lemons and parsley, which adds more zesty, buttery flavors to the jerk chicken.
Easy Recipe Adaptations
If you don’t eat butter you can use olive oil in it’s place. In place of lemons you can also use lime. Grated onions have been used in this recipe because grating makes the onions small and wet enough to combine well in a spice rub mix. If you don’t have a grater use a knife to chop the onions finely into very small pieces. You can also use this recipe with other parts of chicken in place of breasts.
Lemon Butter Sauce Keto Jerk Chicken Recipe
- 2 skinless chicken breasts
- Half a teaspoon cayenne pepper
- A quarter teaspoon ground cinnamon
- Half a teaspoon ground allspice
- Half a teaspoon ground black pepper
- Half a teaspoon dried thyme
- 1 tablespoon grated onions
- Pinch of salt
- 2 tablespoons cooking oil of your choice
Lemon Butter Sauce
- 1 tablespoon butter
- 1 small to medium lemon cut into slices
- About 2 tablespoons fresh chopped parsley
- Pinch of salt (optional)
In a bowl combine and mix well the cayenne pepper, cinnamon, allspice, black pepper, thyme, grated onions and a pinch of salt, rubbing in the onion with the spices.
Pat the chicken breast dry with a towel to ensure there is no excess fluid on the skin.
Add the spice all over the chicken breasts, pressing in in to ensure it sticks to the chicken.
In a pan at medium heat warm up the cooking oil and fry the chicken breasts until cooked for about 7 to 8 minutes each side depending on the thickness of your fillets.
Once the chicken is cooked take it off the pan and drain off most the cooking oil leaving about a tablespoon worth.
Add the lemon slices and fry them for about a minute each side until they start to caramelize.
Add in the parsley and mix then add in the butter.
Once the butter has melted add the chicken back in, mixing it in with the butter.
Take the pan off the heat ready to serve.
