Kimchi Chicken Tomato Soup
This Kimchi Chicken Tomato Soup is a tasty and easy way to add more kimchi into your diet. This soup would be ideal if you wanted to nourish your gut or if you wanted meals that would help in weight loss or weight management, as Kimchi’s health benefits are said to range from being good for gut health to helping in weight loss. The soup also includes some bone broth which is also a nutrient dense food. Or simply enjoy the soup for the taste and nutrients and the rest will just fall into place. You can use any bone broth of choice. The chicken is seasoned with coriander leaf in this recipe which you can easily substitute for other herbs of choice or even use spices.
Kimchi Chicken Tomato Soup Recipe
1 cup kimchi, 2 cups bone broth, 2 tomatoes, 1 or 2 chicken breasts or other part of chicken, 1 teaspoon dried coriander leaf, 2 tablespoons cooking oil of choice, 1 avocado, salt to taste
Prepare to cook by first dicing the chicken into small pieces. Grate the tomatoes or chop them up into small pieces
In a pan at medium heat add the 2 teaspoons of cooking oil and fry the chicken pieces, turning them, until they start to turn golden brown for about 8 to 10 minutes. Season them with coriander and salt.
Once the chicken is cooked take it off the pan and set it aside.
Add more cooking oil to the pan if needed and add the tomatoes. Cook the tomatoes until they turn to a sauce for about 4 to 5 minutes
Add the kimchi to the tomato sauce and mix, then add the broth.
Bring to a simmer, season with salt to taste and take off the heat. Add the chicken into the soup or serve over the soup.
Serve soup with diced avocados, herbs and some olive oil on top if you like.
