This Kale and Lime Butternut Salad combines different textures and flavors to make a tasty Mixed Kale Salad. The butternut has lime squeezed over it before baking, adding citrus flavors to it’s sweetness. Combined with eggs, oranges and avocado to make a salad which is not only tasty but filling as well.
2 portions sliced kale, 3 cups diced butternut, 1 lime, 2 to 4 eggs, half or whole avocado, 1 orange, olive oil, herbs of choice, salt
Place the butternut in a lined baking tray and add about a tablespoon olive oil or other cooking oil of choice. Mix and ensure the butternut pieces are lightly coated in oil. Spread them out evenly on the tray and squeeze lime juice over them.
Bake in a preheated oven at 220 degrees celcius for about 40 minutes.
Towards the end of the butternut baking you can start on the rest of the salad ingredients. Boil the eggs based on your yolk preference
Massage or rub the kale to make it tender. Add olive oil and salt to your preference and add to the plates.
Add the diced orange, sliced avocado, eggs and butternut.
Sprinkle on herbs of choice, salt and olive oil
