INSTANT AVOCADO MINT PALEO PUDDING
This Minty Avocado Recipe is an all in one easy blender recipe which requires no refrigeration to set. This is best made when you want to have it as it will set within a few minutes. If you try to save it for later avocados and banana will oxidize and it will start to look a bit brown. This is a handy pudding to make for a quick fast, snack or even desert. It won’t require space and time in the fridge which is handy if you’re preparing desert for lots of people. You’ll need to have your serving containers ready on hand to pour in, as this desert sets quickly. If you leave it in the blender for a while it will quickly set there and you’ll need a spoon to sccop it out. Much more easier if you pour it out while it’s still liquid.
The frozen bananas used are unripe or just nearly ripe. If you can’t get unripe bananas firm ripe ones will do. Unripe bananas have the added benefit of being a good source of resistant starch which is good for the gut bacteria. Frozen bananas in this recipe are combined with unflavored gelatin, raw honey, coconut milk, fresh mint and avocados which individually come with multitudes of health enhancing benefits.
1 or 2 avocados, 1 large or 2 small frozen bananas, a handful or more of fresh mint leaves, 2 tablespoons unflavoured gelatin, 1/2 a cup coconut milk, 1 cup water, 2 tablespoon raw honey or any sweetener of choice(more or less depending on preference)
On a stove top warm up 1 cup of water. Take it off the heat and add 2 tablespoons of unflavoured gelatin. Stir it till it’s completely dissolved. Or just bloom your gelatin your preffered way. Once gelatin is dissolved add to blender with all the other ingredients. Blend and pour into serving containers. Top with honey or whatever you like. Let it sit for a minute or two and serve.

- 2 tablespoons unflavoured gelatin
- 1 or 2 frozen bananas
- 1 or 2 avocadoes
- Handful or more mint leaves
- 2 tablespoons raw honey or sweetener of choice
- 1/2 a cup coconut milk
- 1 cup water
- Bloom gelatin in 1 cup of water or just warm up one cup of water, add gelatin and stir till it dissolves
- Add all the ingredients to the blender
- Blend and pour into serving dishes
- let it sit for a minute or so and serve.
