Sweet Potatoes will make a good vegetable pasta alternative for those that want a meal that is lighter than pasta and also increase their sweet potato intake. If you don’t have a vegetable spiralizer and you want to try these vegetable pastas and noodles using a julienne peeler or any vegetable peeler is a good alternative. It’s also a good change from the spiralizer machine which mainly does the noodle shape. There is also less clean up by using a vegetable peeler. Pasta colors will vary depending on the sweet potato color.
The taste of the sweet potato pasta will also depend on the type of the of sweet potato. When choosing toppings for your sweet potato pasta choose based on what you normally like to have with a sweet potato or what goes down well with sweet potatoes as opposed to real pasta sauce, which may be too heavy for sweet potato and not go together so well. Sour cream or yogurt based dressings, eggs or tuna with mayonnaise or sweet chili will go down well with this sweet potato pasta.
