If you haven’t tried raw cauliflower rice just try it this way, mixed in with other tasty food. Abundance style bowls ensure that you not only use up what you have in the fridge, you also eat a variety of vegetables in one bowl. You can also add resistant starch white rice or any grains of your choice that you have handy cooked mixed with cauliflower. The only things that will need cooking are the eggs to be boiled or just fried, capsicums to be sauteed and greens, steamed, sauteed or fried. Up to you. You can add other ingredients like pickled vegetables, some cold meats, root vegetables or other good starch. Anything really that you have at hand.
Herby Cauliflower Abundance Bowl Recipe
Riced cauliflower, Variety of Capsicums/ Peppers, Eggs, Avocado, Swiss Chard or any greens, herbs and spices of choice, olive oil, salt, lemon juice
Boil the eggs using your preferred method. I place the eggs in cold water in a pot with a lid and bring to a boil. Once the water starts boiling, I cook it for about a further minute or so for a soft yolk.
Slice the capsicums and saute them in a bit of olive oil for about 3 to 4 minutes or until they loose firmness. Add herbs and chili if you like to them.
Saute the greens or pan fry them in fat of choice for a minute or longer if you like them well cooked. Add salt.
Add olive oil, salt herbs and a squeeze of lemon juice to your raw cauliflower rice
Assemble your bowl to your liking and extra seasoning, olive oil and lemon juice
