These Gluten Free Rice Noodles with Spicy Kale are a quick and easy recipe. The noodles would need to be prepared before hand following the instructions on the packet. This recipe falls within the Grey Area of Paleo Recipes. Some people can tolerate gluten free grains and actually do better with some of these foods added to their diet. Everyone is different so it’s all down to how you feel when you eat them and whether you even like them. Just take care that all the ingredients that make up your noodles are what you want to be eating.
2 servings rice noodles, 4 cups or more sliced kale, 1 teaspoon dried chili or more, salt, 3 to 4 tablespoons olive oil, eggs (optional)
Prepare or cook the noodles based on the instructions on the packet.
In a pan in olive oil fry the kale for about 4 minutes, until it starts to get crispy. Add chili and salt and mix.
Toss in the drained noodles into the kale and mix and leave it cook for a further minute.
Serve as it is or have it with fried eggs.
