This Paleo and Gluten Free Bitter melon bread is made with coconut flour. Making bread with bitter melons as part of the ingredients is one way to enjoy bitter melon. There is no bitterness to this bread at all. It’s tasty freshly baked or cold. GLUTEN FREE BITTER MELON BREAD RECIPE
Before baking you’ll need to prepare the bitter melon.
Preparing Bitter Melon Gourd
Wash the whole bitter melon, Cut it in half lengthwise, Remove the inside part with seeds, Grate it.
4 tablespoons grated Bitter Melon(equivalent to one small whole bitter melon), 2 heaped tablespoons Coconut flour, 2 heaped tablespoons shredded coconut, 2 tablespoons raw honey, 50 g butter, 3 eggs beaten, 1/4 teaspoon baking soda
Mix all the ingredients, with baking soda together except the egg.
Beat the egg and pour the mix in.
Mix it all thoroughly and pour into a lined baking tin.
Use a wide baking tin or cake tin
Bake in a preheated oven at 220 degrees celcius for about 25 mins.
It’s tasty freshly baked as well as cold.

- 4 tablespoons grated bitter melon
- 2 heaped tablespoons coconut flour
- 2 tablespoons shredded coconut
- 1/4 teaspoon baking soda
- 2 tablespoons honey
- 50g butter
- 3 eggs
- Mix all the ingredients thoroughly except the eggs.
- Beat the eggs in a bowl’
- Pour the mixed ingredients into the beaten eggs
- Mix together and pour into a lined baking tray
- Bake at medium heat in a preheated oven for about 25 minutes.
