- 4 small sized pork chops of your choice, or 2 large cut in half
- 2 teaspoons dried basil
- half a cup pork broth or other broth of your choice
- half a cup coconut milk
- 1 tablespoon cooking oil of choice
- 2 tablespoons apple cider vinegar
- 8 garlic leaves, sliced
- half a teaspoon chopped garlic
- half a medium sized onion, diced
Prepare to cook the pork by patting it dry with a kitchen towel then sprinkling on basil over the chops evenly.
Press the basil on to the pork so it sticks on, you can also sprinkle on salt.
In a pan at medium heat warm up the cooking oil and start frying the pork chops to your preferred level of golden brown, on both sides. This should take about 8 to 10 minutes depending on thickness.
Once the pork chops are cooked, take them off the pan, set them aside in a plate and start the sauce.
In the pan you used for the pork, add the onion and fry until it gets translucent.
Add the chopped garlic and fry for a further minute, then add the apple cider vinegar and broth.
Bring to a simmer and lower the heat so the sauce is just bubbling.
Stir in the coconut milk and simmer and add the garlic leaves, season with salt.
Add the pork chops in the sauce and leave cook for about a minute uncovered.
Take them off the heat ready to serve.
