This sweet potato recipe is Paleo, AIP, Vegetarian and Vegan, though the sauce above is not AIP as it has chili, or Vegan as it contains honey. This recipe will be a tasty and quick way to heat up your sweet potatoes in a pan. You can easily cut and fry a few slices for breakfast, as part of dinner as well as have them as a snack with any dipping sauce of choice.
Sweet potatoes boiled whole with skin on can keep in the fridge for up to a week. This makes them a ideal for cooking ahead in a large batch, enabling you to cut their cooking time when you have them. You can slice off what you need as you go along and save the rest for the next meal. In this recipe I used the Orange sweet potato also known as Australian Gold, in Australia, and is known by different name in other countries. You can also cook ahead and fry any other variety of sweet potato that you have available.
Fried Sweet Potato Slices Recipe
Sweet potatoes, 1 tablespoon cooking fat of choice, herbs of choice, salt to taste
Sweet Potatoes Batch Cooking
4 to 6 Sweet Potatoes
Wash the sweet potatoes clean with a vegetable brush to get all the dirt off the skin
Boil the sweet potatoes in a pot with a lid, in about 2 cups of water for about 20 minutes until you can put a fork through without letting them cook to mushy
Take the pot off the heat and drain off the excess water so the sweet potatoes don’t continue cooking sitting in the hot water
Leave the pot uncovered so the sweet potatoes cool totally before you store them in the fridge.
You can store them wrapped in baking paper or in a container with a lid for up to a week.
Frying The Sweet Potatoes
To fry the sweet potatoes cut the slices that you need
In a pan at medium heat add cooking oil and fry the sweet potato slices until they get browned to a level you like.
Turn them to the other side and fry till it it starts to brown. This should take about 3 minutes each side depending on the heat levels.
At the end of cooking sprinkle on some herbs and salt, with quantities based on your preference, then toss to get the seasoning all over, and take off the heat, and serve.
You can enjoy with dipping sauce of choice or as part of your meal based on your diet protocol
