The sweet potatoes used in this recipe are the purple sometimes called red sweet potato. This is due to the color of their skin on the outside though they are white on the inside. They also tend to be sweet making them ideal for salads which don’t need dressings. You can also use other types of sweet potatoes like purple and orange though they vary in taste. Just add salt, herbs and olive oil as a simple dressing and they will bring the flavors together.
To make this Egg Bacon Coriander Sweet Potato Paleo Salad you’ll need to boil the sweet potato before hand and let it cool down. Before boiling the sweet potatoes wash them very well by scrubbing the skin with a vegetable brush. Boil the sweet potatoes for about 20 to 30 minutes depending on size in about 2 cups water.This sweet potato was large so I boiled it for 30 minutes. Cook the sweet potato until you can easily put a knife through it. Drain the water and cool the sweet potato a bit before making the salad.

You can peel the skin off the sweet potatoes or leave it on. There are nutrients in the skin. Cube the sweet potatoes with a knife, add olive oil and sprinkle all your seasonings of choice. Top with eggs, bacon and coriander
