Quick Cooking Keto and Paleo Tomato Soup With Grass Fed Beef Mince
This Easy Keto Beef Tomato Soup makes a quick cooking, tasty soup on a low budget. It use simple ingredients which you probably already have, combining ground beef with paprika, tomatoes, herbs, bone broth and some coconut milk. This is a handy recipe to make when you need a meaty soup that will cook quickly.
Easy Recipe Adaptations
This soup is not spicy but you can make it so by adding on some chili or some black pepper. If you don’t have beef mince, you can use other mince of your choice. Turkey or chicken mince would do very well. You can add on leafy vegetables of your choice to the soup. Add them on towards the end of your soup simmering stage so they don’t overcook.
Easy Keto Beef Tomato Soup Recipe
- 150 g grass fed mince
- 1 medium tomato, finely chopped
- half a medium onion, grated or thinly sliced
- 1 teaspoon paprika
- half a teaspoon cayenne pepper
- half a teaspoon dried herbs of choice
- half a teapoon basil
- half a cup coconut milk
- One and a half cups bone broth or stock of choice
- 1 tablespoon cooking oil of your choice
- 1 tablespoons butter/ghee or coconut oil
- salt to taste
In a pot at medium heat add cooking oil of your choice and fry the onions until they turn translucent.
Add the butter and leave it melt, then add the beef mince and mix well with the onions and butter.
Once it starts to loose its rawness add the tomatoes.
Mix and and cook for about 2 to 3 minutes until the tomatoes start to look cooked.
Add the herbs and all the spices, season with salt and mix very well then add on the coconut milk.
Mix, then add the bone broth and bring to a simmer then lower the heat so the soup simmers at a low heat.
Leave it cook for 2 to 3 minutes, then take it off the heat and set the pot aside ready to serve.
