This Crispy Bacon Turmeric Chicken is a simple meal with lots of flavor. It’s simply fried crispy skin on the outside and on the inner part it has crispy bacon seasoned with turmeric. This is so easy to make with minimal ingredients that you probably may already have handy. The meal is low in carbs but you can easily add sweet potatoes or other carbs of choice on the side.
CRISPY BACON TURMERIC CHICKEN RECIPE
2 chicken thighs, 1 rasher fatty free range bacon or pork belly( i used pork belly), salt, turmeric powder, 2 tablespoons olive oil/1 tablespoon butter/ghee/frying fat of choice
Butterfly the chicken
Simply cut the chicken downwards along the length of the bone. Halfway down the fillet turn the knife outwards and fillet across without cutting off the the main piece. It should end up as one long flat fillet with bone attached.
Finely chop the bacon as well. Salt the chicken
Heat up your fat in a pan and start cooking at medium heat with the skin side down first. As soon as the chicken starts cooking start placing the bacon pieces onto the chicken pressing them down firmly with a fork. Cook the chicken for about 10 minutes or until golden brown on the side cooking.
Sprinkle a bit of turmeric before flipping the chicken over to cook on the other side
Let it cook for a further 10 to 15 minutes on the inside or until it’s the level of crispiness you like
When it’s done set it on a plate crispy skin side up to keep the skin crispy until serving
Serve with some sauteed spinach and avocado to make a simply satisfying. Crispy skin on the outside and crispy bacon on the inside. Its a win win situation tastewise.
