These creamy tomato spicy sausage meatballs make an easy quick meal. They cook easily in about 20 minutes and go very well with cauliflower rice.
You can also skip the chili in this recipe and it will still be tasty because the combination of tomatoes and coconut milk is always tasty. This recipe will work whether you use chicken, beef, lamb, pork sausage or any type of meat sausages without too many additives that may not be good for you.
2 to 4 sausages, 2 medium to large grated tomatoes, 1 cup spinach or swiss chard, half a cup coconut milk, qurter of a cup broth or water, half a teaspoon paprika, quarter teaspoon turmeric, half or more a red chili, 2 to 3 spring onions, salt, 1 or 2 tablespoons cooking fat of choice
Cut the sausages and roll them between your hands to tidy them up a bit and get them into sausage balls or close to, with the casings on.
In a pan on the stove top at medium heat, fry the sausages in cooking fat of choice. Turn them occasionally and cook until golden brown all round. This should take about 8 to 10 minutes at medium heat.
Add the tomatoes and let them cook for 2 to 3 minutes.
Add the paprika, chili and turmeric (and other spices you decide on) and mix, then add the spring onions and spinach and cook until spinach wilts. This should take a minute to two minutes.
Add coconut milk and water or broth and bring to a simmer. Taste to see if it needs salt and add accordingly.
Serve these Creamy Tomato Spicy Sausage Meatballs with cauliflower rice or the real rice if it agrees with you. The carrots are just boiled whole and sliced. The tasty chili and creamy sausages have all the flavor to go with the simple side dishes.
