This Creamy Garlic Oyster Mushrooms Recipe can make a quick and easy meal in under 10 minutes, served over your choice of vegetable mash. Oyster mushrooms have a firm texture, with less moisture, and cook up to a more meaty texture, without reducing down like the more common button mushroom or flat mushroom varieties.
The Mushrooms are simply cooked combined with garlic, onion, coconut milk and garlic leaves. To keep your meal low in carbs, choose cauliflower mash. If you need it to be higher in carbs, sweet potato, or other potato mash will do. Explore and try other vegetable mash types of your choice within your diet protocol.
Easy Recipe Adaptations
If you don’t have Oyster mushrooms you can try other mushroom types of your choice. If you don’t have garlic leaves you can use scallions. You can have this meal as it is or you can top with protein of your choice within your diet.
Creamy Garlic Oyster Mushrooms Recipe
- 2 cups or more oyster mushrooms, shredded
- 1 teaspoon crushed garlic
- half a diced onion
- 2 teaspoons lemon/lime juice
- 8 to 10 leaves garlic leaves, sliced
- half a cup coconut milk
- 2 tablespoons coconut oil/butter/or other fat of your choice
- salt to taste
In a pan at medium heat heat up the coconut oil or fat of your choice.
Fry the onions until translucent then add the garlic and fry for a further minute.
Add the mushrooms and fry for about 2 minutes until they start to look cooked
Add the garlic leaves and toss in the mushrooms.
Add lemon juice and salt to taste, and toss in so it mixes well.
Add the coconut milk and mix well.
Leave it cook and reduce for about 2 minutes.
Serve over your mashed of your choice or a creamy mushroom side for your meal.
