This Coriander Lemongrass Chicken is made with a green paste which combines garlic, lemongrass, coriander leaf, lemon juice and some basil. This herb combination makes a tasty citrus flavored green chicken. The paste can be processed in a blender or food processor. If you don’t have a blender or processor you can finely chop these herbs, and then pound them to a paste with a pestle and mortar.
If you want to make double the quantities of the chicken recipe simply double the Coriander Lemongrass paste. In this recipe chicken thighs have been used, which you can substitute with chicken drumsticks. You can use either skinless chicken or chicken skin on. If you use boneless chicken reduce the cooking time a bit. You can add chicken stock at the end of cooking to have a bit of sauce or leave the chicken dry.
Coriander Leaf Lemongrass Chicken Recipe
- 4 bone in chicken thighs or drumsticks
- half a teaspoon turmeric
- salt to taste
- 1 tablespoon cooking oil of choice
- 4 tablespoons chicken broth or stock (optional if you want some sauce)
- Lemongrass Coriander Paste
Coriander Lemongrass Paste
- 2 medium lemongrass stalks
- a quarter cup fresh coriander leaf
- 1 tablespoon chopped garlic
- half a teaspoon dried basil
- 1 tablespoon lemon juice
- 1 tablespoon olive oil or other cooking oil of choice
- 1 tablespoon water
Make The Paste
Make the paste by processing the herbs in a food processor until smooth ready to use in your chicken.
Make sure the chicken is dry by patting it with a chicken towel before cooking it.
Sprinkle evenly, all over the chicken some salt and all of the turmeric.
In a pan at medium heat, add the cooking oil and warm it up.
Start by frying the chicken skin side down first.
Fry it for about 8 to 10 minutes until the skin side is golden brown and crispy.
Turn the chicken over and fry the other side for about 8 minutes until it looks cooked.
Add the lemongrass coriander paste covering all the chicken.
Keep turning the chicken in the sauce until all the liquid cooks up and the herbs are stuck to the chicken.
Add the chicken stock and bring to a simmer and take off the heat ready to serve.
