If you have any left over pulled pork this Coconut Mushroom Pulled Pork recipe is a quick and tasty way to change up the flavor of your pulled pork , in about 10 minutes. This pulled pork recipe is made up of mushrooms, basil, garlic, apple cider vinegar to make a sauce you can enjoy over any vegetable mash of your choice.
Making your own pulled pork is always a better and cheaper option, but for other reasons you may want to go with store bought pulled pork. If you go with this option take note if the ingredients used are in line with your diet protocol. Even if the pork looks plain they may be added sugars, which you have to be aware of on a low carb diet. They may also be added spices not compliant with your AIP diet protocol.
Coconut Mushroom Pulled Pork Recipe
- 1 cup or more pulled pork
- 1 cup sliced oyster mushrooms or other type of your choice
- half an onion sliced
- 1 teaspoon crushed garlic
- 1 level teaspoon dried basil
- half a cup coconut milk
- a qurater cup bone broth or stock of choice
- salt to taste
- 2 tablespoons cooking oil of your choice
- vegetable mash of your choice
In a pan at medium heat warm up your cooking oil.
Add onions and fry until golden brown without burning.
Add the garlic and fry for another minute then add the basil and mix well.
Add the mushrooms and fry for a minute until they start to look cooked.
Add the pulled pork and mix in with the mushrooms.
Add the bone broth or stock and bring to a simmer.
Add coconut milk, and reduce the heat, and bring to a low simmer.
Cook for about 3 to 4 minutes until the sauce reduces to your preferred amount and thickness.
Take the pan off the heat ready to serve over a mash of your choice.
