If you love sausages but worry about the fillers and casings used in their production you’re better off making your own. If you make your own you’ll get to choose the type of meat and herbs used. The sausages are easy to prepare and cook in the oven.
You can vary the ingredients and use a different combination of herbs and meat type. I used chilli and coriander, and have also used mint and combined with cranberries for fruity sausages. Experiment with different herbs in your cooking. You’ll be pleasantly surprised.
Mix all the ingredients, divide into balls and roll into sausage shapes and cook in the oven for about 20 mins

- 200g ground beef
- 1 rasher free range bacon
- chopped chilli
- chopped coriander
- 2 tablespoons grated sweet potato
- good salt
- Mix all the ingredients
- Divide into balls and shape into sausages
- Cook in the oven at medium heat.
