Keto Paleo Creamy Broccoli Soup with Parsley
This Chicken Broccoli Coconut Milk Soup combines chicken stock, broccoli, lemon juice, coconut milk and some parsley to make a creamy soup with some lemon flavors. Though parsley is commonly used as a garnish, it’s said to contain high levels of vitamin C and A, as well as contain a combination of oils that promote good health. The chicken in the recipe has been boiled, making it easy to shred and incorporate easily into the soup.

If you need to adjust the amounts of fats or protein to suit your macros you can easily do this with your soups. Add more fats to your soup when blending. You can also reduce or add on more protein depending on your needs.
Chicken Broccoli Coconut Milk Soup Recipe
- 1 chicken breast
- 3 cups broccoli florets
- 3 tablespoons chopped parsley
- 1 tablespoon lemon juice
- 1 cup chicken broth
- half a cup coconut milk
- 2 teaspoons coconut oil
- 2 cloves crushed garlic
- salt to taste
In a pot with a lid boil the chicken breast at medium heat, with a quarter cup of water and a bit of salt for about 12 to 15 minutes until it’s cooked through.
Take it off the heat and set it aside to cool down before shredding. If there is any left over stock from boiling add it to your cup of broth.
Add coconut oil to the pot and add the broccoli florets and fry for about 2 minutes until they start to look vibrant green.
Add garlic and fry for a further minute then add the chicken stock and bring to a simmer.
Take it off the heat and transfer the contents to a blender.
Add the parsley, lemon juice and coconut milk and blend at high speed for about 20 seconds or longer depending on how smooth you want your soup. Take care to let the steam off before blending to avoid the blender contents overflowing from the pressure of the heat when blending.
Return the blender contents to the pot, taste and season with salt to your liking. Add more parsley or lemon juice if you prefer.
Bring the soup to a gentle simmer at low heat and it’s ready to serve.
Shred the chicken into small pieces and serve with your soup.
