This Cauliflower Mash, Mushroom and Fried Egg is a very quick meal you can easily have ready in under 10 to 15 minutes. It makes a delicious healthy and filling meal with a few simple ingredients, like cauliflower, mushrooms and eggs.
This recipe cooks very quickly to make a simple satisfying meal without much effort. You’ll need to have the ingredients ready assembled to cook and plates ready to serve to enjoy it still hot. I’ve used coriander in the mushrooms but you can easily substitute that with basil or any herb of your choice. You can also use diced flat mushrooms or other types instead of button mushrooms. You will also need a food processor of blender to process the cauliflower to mash.
Cauliflower Mash, Mushroom and Fried Egg Recipe
1 small head cauliflower cut into florets, 1 punnet or 2 servings button mushrooms, 2 eggs, 2 tablespoons butter, 2 tablespoons coconut milk, olive oil, 3 or 4 cloves garlic, 1 teaspoon dried or semi dried coriander, salt, black pepper
Assemble all your ingredients and clean the mushrooms if they need it
Start by boiling the cauliflower with the cloves of garlic in about a cup of water. Once it comes to a boil let it cook for about 5 minutes without leaving it get too mushy.
While the cauliflower is cooking add a tablespoon of butter to a pan and saute the mushrooms with coriander and salt. Cook for about a minute turning them, then add 2 tablespoons coconut milk. Just bring to a simmer and take off the heat and keep in a warm place
When the cauliflower is done, drain the water and process the cauliflower to mash with a tablespoon of butter and some salt.
Quickly fry the eggs in some olive oil.
Serve your mash with mushrooms and all the juices topped with fried egg. Sprinkle black pepper and herbs over everything
