This Cauliflower Coconut Aromatic Rice gets its aromas from a combination of cinnamon, kaffir lime leaves, lemongrass and turmeric for the color. The rice combines cauliflower and some fried shredded coconut to make a tasty and healthy rice meal.
You can also substitute and use other combinations of aromatic seasonings like garlic, coriander and also spices used in traditional aromatic rice seasonings like cloves and cardamom pods. Here the rice is served with chicken, bacon and egg, but you can easily serve it with other protein of choice and even with a curry of your choice.
Cauliflower Coconut Aromatic Rice Recipe
2 servings diced chicken, 2 or more streaks diced bacon, 2 or more boiled eggs, 3 or 4 cups cauliflower rice, 4 tablespoons shredded coconut, 1 teaspoon turmeric, 1 teaspoon or more grated/paste lemongrass, half a teaspoon cinnamon, 4 or more sliced kaffir lime leaves, dried or fresh herbs of choice, 2 or 3 tablespoons cooking fat of choice, salt, and any other extra seasonings.
In a pan in about a tablespoon fat of choice fry the chicken pieces until they turn golden brown.
Season with salt and whatever else you like. Once the chicken pieces are done take them off the pan and set aside in a warm place.
Next add the bacon and cook to your choice of crispiness and then take it off the pan and set it aside with the chicken.
Add more fat to the pan then add the shredded coconut and all your spices and other seasonings. Let it cook for 3 to 4 minutes until some of the coconut starts to turn a crispy brown. Toss in the cauliflower and mix.
Leave it cook for about a minute depending on how well done you like your cauliflower rice. Season with salt and more herbs.
Serve with some chicken, bacon and boiled eggs.
