This Cauliflower Beef Mince Baked Egg meal is made by layering some cauliflower rice, a cooked beef mince/ ground meat dish and then baking eggs over it to make a quick easy meal.
This dish can be a great way to use leftover mince or repurposing it to produce a different meal. You can also make from scratch starting off with cooking your mince. The mince dish can be in the form of your favorite chili, curried mince or even bolognese mince sauce. In this recipe I made a simple tomato bacon beef mince, which you can easily substitute with your own mince/ground meat recipe.
Cauliflower Beef Mince Baked Egg Recipe
Servings 4 to 6
3 or more eggs, 2 cups cauliflower rice, 200g or more minced meat of choice, 2 streaks diced bacon, half a diced onion, 1 spring onion, 2 grated tomatoes, 1/4 (quarter)teaspoon paprika, 2 cloves garlic, black pepper, salt, half a cup broth/stock, 2 tablespoons cooking oil of choice, herbs of choice for serving
Fry the onion at medium heat in cooking oil for about a minute. Add garlic then add bacon and cook for a further minute. Add the mince and cook for about 3 to 4 minutes, until it all looks cooked, stirring and breaking it apart. (If it’s beef mince which tends to form chunky bits) Add spring onions, paprika, salt and a twist or more black pepper. Add grated tomatoes. Leave them cook for about 2 to 3 minutes until they start to break down to a sauce. Add stock, cover and bring to a simmer. Reduce the heat so it simmers slowly for about 3 to 4 minutes. The sauce should be a thick consistency. Reduce it further if you need to or add more stock if you want it more sauce. Just taste and season accordingly
Baking with Eggs
Add cauliflower rice to the bottom of baking dish. Season with salt and whatever you like. Add the mince on top.
Break the eggs onto a separate bowl. Scoop out the yolks with a spoon and place them wherever you like over the mince. Pour the egg whites evenly over the whole surface. Add salt, sprinkle herbs of choice and drizzle cooking oil of choice
Bake in a preheated oven at 220 degrees celcius until egg yolks are done to your preference. You can bake covered or open. This was baked in about 12 minutes. Keep an eye on it. You can sprinkle more herbs and drizzle some olive oil before serving.
